Chicken Jalfrezi

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion
  • 2 cloves garlic
  • 4 chicken breast fillets
  • 1 green pepper
  • 1 chilli pepper
  • 3 tsp ground turmeric
  • 1 tsp chilli powder
  • 1 ½ tsp salt
  • 1 can chopped tomatoes
  • 2 tbsp ghee
  • 3 tsp ground cumin
  • 3 tsp ground coriander
  • 2 tbsp grated fresh ginger root

Method

  • Heat the oil in a deep pan over a medium to high heat
  • Add the onions, pepper, chilli and garlic and cook for about 2 mins
  • Add the chicken
  • Add the tumeric, chilli powder and salt
  • Fry gently scraping the bottom of the pan frequently and turning the chicken
  • Add the tomatoes and simmer over medium heat for 20 mins
    • Note, if you feel you need more liquid as I did half fill the tomato can with water and add to the pot
  • Uncover and simmer for another 10 mins
  • Add the ghee, cumin, ground coriander, ginger, and simmer for another 5 to 7 minutes
